Prepare yourself for the yummiest and easiest vegan banana bread there is!
Three black bananas and a few cupboard stables is all that stands between you, and the banana bread of dreams.
Perfect for a blustery Sunday afternoon in, so - load up your favourite Netflix show, (or re-watch Friends for the billionth time) grab the peanut butter to smother on top and put the kettle on.
Cinnamon is well and truly the best un-kept secret when it comes to banana bread, adding a warm and cosy kick to this all time favourite.
Roll up your sleeves and lets go!
All ingredients can be found either online, or in your local supermarket. You can also swap out the self -raising flour for a gluten free alternative.
3 large, black bananas
75ml of vegetable oil (or sunflower) You'll also need a little extra to grease the tin
100g of light brown sugar
225g of self-raising flour
2 heaped tsp of baking powder
3 tsp of cinnamon
Preheat your oven to 200C or 180C for a fan oven.
Mash your 3 bananas with a fork, then mix in 75g of vegetable oil and 100g of light brown sugar (make sure you mix this in well)
Once mixed well, add 225g of flour, 2 heaped tsp baking powder. Again, give it a good old mix before adding 2 tsp of cinnamon and mixing again.
Pour the mixture into a greased 2lb loaf tin. Snd pop in into the oven for 20 minutes. If the cake starts browning too much, cover with tin foil. Cook for another 20 minutes or until a skewer comes out clean.
Allow your b-e-a-utiful banana bread to cool a little before slicing. It's incredible freshly baked with a smothering of peanut butter on top. But also, develops a gooey quality the next day!
