Let's GUAC and roll...

I'm sorry about the title but I had to, I just had to. You know how it is.

BUT on an incredibly serious note, brace yourselves people, because we are about to embark on the craziest guacamole journey of a lifetime. Are you ready for a super simple, incredibly easy and tangtastically tasty guacamole recipe? Yes, I thought you were.

Now, I absolutely love breakfast food, so the weekend is my chance to jump in the kitchen and rustle up some new and exciting (and sometimes borderline crazy) breakfast dishes for my partner and I.

I had picked up The Tofoo co's smoked sizzlers during the week and had been thinking about what I could pair them with; when suddenly, I had my light bulb moment -

Potato waffles and guacamole!

Sunday morning comes, and I spring out of bed and into the kitchen. 'Alexa play today's top hits' and with The Weekend playing in the background I was ready to go. (Coincidence in the band name? I think not)

It went down a treat!

The spicy, zingy, creamy kick of the guacamole paired with the smoky Tofu sizzlers was a taste sensation for the tongue. I would definitely recommend them; they don't taste like 'sausages' but I think that's what I loved about them the most. The texture, after baking them, was almost crumbly which worked perfectly with the dish.

After I'm finished writing this recipe up for you all today I'm off into the kitchen to make it again - enjoy!

  • Two whole avocados

  • Half a lemon

  • Four cherry tomatoes

  • Two Spring onions

  • 1tsp Birds eye chilli flakes (you can swap these for any type of chilli flakes if you're not as much of a spice lover)

  • 2tsp Aromat

  • Black Pepper

  • Salt

  1. Cut your two avocados in half, being mindful of the stone. When you've sliced them all the way around, twist and pull! You should then have two halves like in the picture above.

  2. Turn the avocado so that it's skin side up and slice into strips.

  3. Remove the skin and place the slices into a bowl. Grab your fork and get mashing! You can make the avocado as smooth or as chunky as you like.

  4. Cut the cherry tomatoes into small chunks and add them to the avocado.

  5. Slice your spring onions into small piece and throw them in as well. Mix the guacamole.

  6. Cut your lemon in half, and squeeze it all into your bowl and then give it another mix.

  7. Add the Aromat, chilli flakes, salt and black pepper to taste. Give it a final stir and get ready to be amazed!

This is avo-control!
