The PERFECT Vegan and Gluten Free Pizza

Hands up, who LOVES pizza?

These are vegan, gluten free and packed full of flavour. And no I'm not lying - they really are vegan!


After transitioning to a vegan diet at the end of 2019, one thing I have yet to come across is a darn good 'meat' pizza. Supermarkets have started adding more vegan lines, but they tend to just be packed full of veg and with no cheese.


Is a pizza even a pizza if it doesn't have cheese on it?! I THINK NOT.


There was only one option, to create my own little pizza masterpiece.

And I am pleased to announce that I succeeded.


These pizzas are also perfect for the lazy cook that lives in all of us. I know that there are countless pizza base recipes out there BUT I happened to come across the BFREE stone baked pizza base at Sainsbury's, and let me tell you - it changed my life.


It was doughy, yet crispy, thin but fluffy and I honestly would never have guessed that it was gluten free.


Homemade pizza hits the spot every time. It also has other fantastic pro's:


IT'S CHEAP: Takeaway pizza can set you back a small fortune, but at £3.60 for two bases, these are a steal. 

IT'S EASY TO MAKE: All you need are your raw ingredients, chop them up, throw them on and voila! 

IT'S SUPER QUICK: They only take around 10-15 minutes to cook. 

YOU CAN PUT WHATEVER THE HELL YOU WANT ON IT: Get creative - throw whatever you want on and reap the rewards. 

I am also going to tell you exactly how I make my ridiculously quick and easy pizza sauce.


Previously, I used a store bought one but A) there wasn't that much of it and you can't skimp on pizza sauce and B) it was lacking that oomph in flavour.


I made two different vegan alternatives to some 'classic' pizzas that I'm going to share with you:


  1. The 'American Hot': beef, green chillis, onion and peppers

  2. A chicken and mushroom feast: chicken, mushroom, tomatoes and peppers


PIZZA SAUCE:


Ingredients:

  • 4 tbsp Tomato Paste

  • 2 tbsp Tomato ketchup

  • 1/2 tsp Garlic Granules

  • 1/4 tsp Basil

  • 1/4 tsp Oregano

  • A touch of cracked black pepper and salt to taste


Method:

  1. Add all of your ingredients to a bowl and give it a good old mix!


Yes it really is that easy!



THE AMERICAN HOT

Method:

  1. Preheat your oven to 180 degrees (fan)

  2. Lay your pizza base on a flat surface, and prepare all of your veg - let's get chopping! I prefer my vegetables to chopped nice and finely for my pizza, but that's up to you

  3. Spread the pizza sauce onto your pizza base, work from the middle outwards. You want to leave a thin gap around the edges for your crust

  4. Layer on your cheese. Again, the quantity you add if up to you, as a base you want the cheese to cover your pizza base nicely.

  5. Now throw on all of your chopped veg, making sure it is evenly distributed

  6. now for your 'meat', again you want to make sure it is spread over your pizza base (see the before and after pictures above for guidance)

  7. Season with salt and pepper and pop it in the oven!

  8. Bake for 10-15 mins, you want to see the middle of your pizza bubbling and the crust going golden brown.

  9. EAT AND ENJOY!


TIP: I drizzled on some Sriracha sauce before serving and it was DELICIOUS!

TIP: Before serving I drizzled a little Vegan Caesar dressing on top which complimented it perfectly.
