Where we live there are NO good Chinese takeaways, none. Actually scratch that, there is a good one BUT unfortunately they do not cater to the vegan eater - SORT IT OUT.
If you're in the same position, or if you're just trying to cut down your takeaway consumption then I have the perfect solution - a good old fakeaway!
I've been experimenting with different ways to cook tofu over the past few weeks and I have to say, this one really hit the spot. It was crunchy, sticky and super tasty.
Hands up who else has tried countless different brands and found that no matter how much pressing you do it just stay soggy... well at the moment I am in LOVE with The Tofoo Co's tofu. It takes a minimal amount of 'pressing', and always comes out how I want it to - be that scrambled, fried or oven baked.
As fakeaways go, this one is super quick and ridiculously tasty. It is also affordable, with the Sainsbury's Teriyaki sauce I used being the biggest steal at only 90p. I say this because since I started my vegan journey one of the questions I've been asked the most by friends and family has been:
"Yes but, isn't being vegan really expensive?"
And truly the answer is no. Or at least it doesn't have to be. Like anything you don't have to go for the well known brands. Personally, I have found some of the supermarkets own brand products to actually be better! With veganism's popularity growing, there seems to be more and more products available every day - HOORAY!
If you're in the UK, I especially recommend Asda and Tesco's plant based ranges - lot's of choice and very tasty indeed. Let me know in the comments if you have any favourite cheap steals!
Without further ado:
LET'S GET COOKING!
Prep time: 10 mins Cook Time: 25-30 mins. Serving: 4 People
1 block of extra firm tofu
2 Fresh Chilli's
Soy sauce (or Tamari)
Teriyaki Sauce (I used Sainsbury's own brand)
2 1/2 tbsp cornflour
2tsp garlic granules
1/2 tsp salt
Pre heat your oven to 200C (fan)
Take your block of tofu and press for 10-15 mins. Once most of the moisture is out, cube your tofu into bite sized chunks.
In a mixing bowl add your cornflour, garlic granules, salt and pepper. Mix them together to make sure they are all combined.
Add your cubed tofu to the mixing bowl and make sure to cover the tofu pieces in the mixture. Just give it a good old mix around.
Grease a baking tray and tip your tofu onto it (You want to make sure the tofu is evenly spread out).
Place into the oven, and bake for25-30 mins. Turn your tofu about half way through,
Okay, whilst your tofu is cooking nicely in the oven, boil your rice. (I normally use 70g per person)
Chop you pepper into thin stripe and prep your green beans.
Place a splash of oil into a frying pan and add your peppers and green beans. (you want the pan to be nice and hot!)
Whilst cooking, season with salt and pepper and add a splash of soy sauce. You want your veg to be al-dente, so I suggest cooking for 6-8 mins.
Chop your fresh red chilli's, and place them to one side.
When your tofu is done, take a pan and heat your teriyaki sauce. Add your tofu and mix it all up to make sure the tofu is glazed.
And you're done! Plate the rice, stir fried veg and tofu and garnish with your fresh chilli's. Now there's only one thing left to do...
